Grew up eating this on special occasions.
As a kid I didn't even know it was raw.
It's addicting with the spicy chili and slice of garlic.
Whole round peppers provides a nice crunch.

No way bánh canh is one of my fav. Number two on my list. Numbers 1 is hủ tiếu/mì gõ. Plus the banh cảnh at that location is not good. There’s plenty of other ones that are better.

Do some research before you start talking out of your ass. Nem chua is everywhere in the USA
That's not a normal banh canh. I have never seen a bowl of banh canh looking like that because it's a clear soup. Nem chua is great so I don't know why it's on the bad tasting food list.

This is a specific style of bánh canh from Hue called bánh canh nam phổ. Quite a lot different from normal bánh canh. It's great you tried this one. A great Vietnamese dish. But I think it's not really what you were looking for
