The Island Shangri-La’s Lobster Bar and Grill is the talk of the town right now. Even defying the expectations of head bartender Agung Prabowo, the classic art deco-style bar has just made a stunning début on the world stage, being named the 18th best bar on the planet by industry standard the World’s Best 50 Bars. Lobster Bar certainly ticks all the boxes though – a beautiful, comfortable and inviting space, a definite mood and understanding of what it’s about, and drinks that are absolutely spot on. One of the oldest cocktails in history and a predecessor to the martini, this sweet, beautifully balanced tipple has a base of Dodd’s gin, and elevated with sweet vermouth, maraschino cherry liqueur, and Angostura and orange bitters.
Refreshing and complex, this Pedro Ximenez-based cobbler is topped with fresh berries and served in a copper ibrik (a traditional Turkish coffee pot) to keep it cool.
Rock and rye
Prabowo’s take on the whisky sour is an intriguing mix of American rye whisky, honey, orange blossom, peach liqueur, lemon juice and house-prepared plum bitters, which have been infused behind the bar for a week.
This egg-based drink is, according to Prabowo, perfect for a hangover – and take our word when we say he’s right. Smooth as you’d like, this drink actually draws influence from the barkeep’s native Indonesia, with infusion of galangal, turmeric and ginger. It’s topped off with a mini-apple for a bit of sweetness to round it out.
The Lobster Bar’s re-interpretation of the classic Negroni is smooth but sharp – tequila, sweet vermouth, Apérol, dry vermouth, and orange and Angostura bitters are poured over a single piece of ice that’s even stamped with the bar’s logo.
