NOMI RESTAURANT is located deep in the mountains of Kyoto.

The cuisine is prepared collaboratively by three brothers, each working in close coordination throughout the meal.

They place extraordinary emphasis on the sharpness and precision of their knives, reportedly switching between more than 40 different blades over the course of a single ingredient.

The fish is sourced from Fujimoto-san in Ehime Prefecture, while the venison and wild boar are hunted by the brothers themselves.

Every dish revolves around the concept of sharpness — and the results feel both innovative and deeply impressive in flavor.

  1. Looks super interesting, a bit remote. Would be nice to combine it with an onsen (Hiyoshi nearby) and pottery hunting in Tamba.

    How was the food itself? Seems like a lot of people are rating it highly based on the philosophy, novelty, location, age of chefs, etc. but curious how good the food actually is
