We started out with some bites: chicon gratin in a bite made of ham mousse, kataifi, endive puree

Moules frites in a bite: a jelly of mussels on a piece of fried potato

Then some octopus with a Japanese curry

And chickenliver with maitake

Our first course was a veal tartare, vitello tonnato style, with Balfego tuna, and smoked almond

The second course was a perfect langoustine served on a terrine of pork neck with salsify in a fantastic sauce

The third course was a flan of smoked eel with cauliflower and dashi

The main course was hareback harlequin

With celeriac and cranberry

The dessert was a fig chutney surrounded with greek yoghurt, served with vanilla ice cream and a salted caramel sauce

Then came out some petit fours: mascarpone with mandarin, a chocolate thing and a choux with creme patissiere and raspberry
