Spaghetti is pretty simple & tasty
I made a lot of tacos out of our rented camper van in New Zealand last month. Fairly simple, you only really have to cook the protein or meat substitute if you’re a soi boi like me.
Par-cooked packages of tortellini from aldi or just about any grocery store boil in about 4-5 minutes so just pair with a decent sauce and that makes a hearty meal.
Meat on the grill, pasta in the pot on the burner. I have the same thing. I should get it cleaned up.
Anything you like to eat that can be cooked in a pot or frying pan.
I have kids so I typically cook a batch of pancakes at home, put them in a Ziploc, and toss them in the cooler. Then for breakfast I throw one of these toasters on 1 burner to warm up 4 pancakes at a time and get my coffee going on the other burner.

I love a scramble for breakfast. You can easily portion for two and can customize it to your preferences. I like using egg, sausage, bell pepper, hash browns, and some onion.
You can also do things like French toast, sausage gravy, or pancakes
For lunch I would keep it easy. Stuff like instant ramen or sandwiches.
For supper I like doing things like chili, foil/hobo packs (tough on a camp stove), pasta, or steak if you’re feeling bougie.
Fried potatoes in foil 😋
Whatever you like at home you can make camping. Lasagna, enchiladas, pbj.
We’re a fan of knorr and Lipton rice sides, just add water and heat.
