Just got back from a meal at la bûche in Ohara, a rural pocket of Kyoto about 45 minutes north of the city center, and I'm still thinking about it.
Chef said he visits the local market every morning and builds the day's course around whatever's there, so the menu changes daily. So a lot of the vegetables were grown around the area, and a lot of the meats (deer, boar) were hunted by hunters in the area as well.
Was my first time trying deer and boar but chef cooked it perfectly and the standout to me was the deer heart. I was told some seasons they even serve bear which I'm excited to come back for.
If you want a unique dining experience a bit outside of Kyoto rather than the traditional sushi and wagyu, I highly recommend the trip out here.
