The Continental is introducing a few new a la carte items to their all-day dining menu. Some new desserts have been added to the list, including a new dark chocolate soufflé and a baked quince pain e’spice, but it is the simplicity of this chocolate caramel tart that wins our hearts. A buttery shortcrust pastry shell is filled with a sweet creamy caramel filling and topped with chocolate whipped cream. The chocolate shards bring extra texture to the smooth dessert, which is available all day on the a la carte dessert menu.

Caprice

Caprice at Four Seasons Hong Kong is launching a seasonal black truffle menu this month, and Nicolas Lambert, the establishment’s pastry guru and winner of our Best Pastry Chef of the Year, is creating a unique plated dessert to celebrate the earthy morsel. The grand cru chocolate sphere, Agens dried plum marmalade, Perigord black truffle fuses celebrated black truffles with Guanaja chocolate mousse, pairing with a marmalade made with Agen plum and black truffles, all filled within a delicate chocolate sphere. The dessert is part of the full black truffle launched earlier this month.

Épure

After the raving success of his signature Grand Marnier soufflé at Épure, executive pastry chef Matthieu Godard is adding a seasonal element in a new dessert available for a limited time. The Araguani 72% chocolate three ways takes the dark chocolate through three different executions: soufflé, ganache, and ice cream. The brilliant twist lies in the ganache and ice cream, as seasonal Perigord black truffles are added into the feathery light dessert, lending an earthy touch to the sweet finish.

The ever-popular Japanese ice cream parlour has opened in Tsim Sha Tsui, with a much bigger shop space and a richer selection of desserts such as Uji Kintoki espuma kakigori (Japanese green tea shaved ice), half-baked gateau cheesecake and Mangetsu parfait. The Uji matcha cheesecake is a good-sized serving of creamy cheese filling flavored with matcha green tea from Uji, Japan. The dessert is light and creamy, and the generous serving is good for sharing among friends.

Ms. B’s Cakery

Launched during the festive holiday season, the queen of chocolate from Ms. B’s Cakery is a joyous celebration of the titular ingredient. The patisserie is revered for the fine craftsmanship of their cakes and the creative vision of Bonnae Gokson, and this particular chocolate cake is no different. Featuring layers of different chocolate textures, from a light sponge to rich fudge and creamy white chocolate mousse, the cake is garnished with chocolate shavings. The new chocolate cake requires two days advance reservation and it is available in 500g and 1kg portions.

Drawing Room Concepts’ latest opening is a Portuguese restaurant with a strong focus on seafood. The Tsim Sha Tsui restaurant’s signature pastel de nata, or Portuguese egg tarts, are very much different from the conventional varieties popular to locals. Made with a traditional recipe, these custardy delights begin with a flaky pastry made with butter. A touch of lard adds flakiness to the rich crust. Infused with cinnamon and lemon, the sweet custard filling quivers as the tarts come out of the oven, yielding a smooth texture with citrus and spice notes accompanied by the sweet pastry case.  The pastel de nata are available at the restaurant as well as take away purchase.

The restaurant’s dessert selection is small, but the restaurant’s signature pistachio and cherry soufflé is nothing short of spectacular. A heaping peak of fluffy soufflé rising inches above its copper vessel, the golden exterior encases a mousse-like interior with a rich flavor of pistachio. Don’t forget to enjoy with macerated cherries served on the side.
