The “Tartufo” is a sweet pure chocolate ice cream that has the flavor and charm of the things of the past.
The “Tartufo” is a classic dessert of the Roman tradition.
It was invented at the Tre Scalini and for this reason it is now called the Tre Scalini “Tartufo” all over the world.
The recipe for the “Tartufo”, created in 1946 by the progenitor of the Ciampini family, involves the use of 13 different qualities of cocoa from Austria and is still, despite many have tried to imitate it, remained jealously secret.
The Tre Scalini “Tartufo”, still prepared today according to the original recipe by our master pastry chefs, is served with lots of soft cream and a crunchy wafer and can be enjoyed happily in every season.
It is the local specialty and is famous all over the world.
According to many, you have to try it at least once in your life.

The city’s early population originated from a mix of Latins, Etruscans, and Sabines. Eventually, the city successively became the capital of the Roman Kingdom, the Roman Republic and the Roman Empire, and is regarded by many as the first-ever Imperial city and metropolis.
