Hard to find fries in America that are still fried in a beef fat/tallow as opposed to crappy seed oils. Sure not a healthy meal but certainly a "better for you" oil to fry in. Not to mention the texture and taste!!
I'm afraid you're walkin' on thin ice on the topic of Fries, Friet in Belgian, Patat in Holland (The Nederlands 2 U) I haven't eaten much fries in Belgium but some Dutch fries really are better as goes for the better Mayonaise in The Netherlands. The Belgian version is more sour and thinner. Although! Belgian 'Haute Cuisine' is known to be really top notch. And did you know the 'True Filé Americàn' was invented in a Restaurant that still exists in Brussels? Also Horse Meat is a Belgian staple in some regions. Aswell as 'Zoet-Water Konijn'.. (Sweet Water Rabbit) Which actually is fancy for Big Rat of sorts..
im mostly a sauce on the side person dont like so drowned out by it.. Only thing I like that way is poutine 🙂 But those fries look so good .

Hey David, Surinam used to be a Dutch colony, so there are a lot of surinamese restaurants there, go do a food tour up there, they will have the javanese peanut saus you love so much.

My fav is home made. Wilja potatoes not too thickly cut. Fried in fresh corn oil till brown on the edges. Then served with cracked sea salt and cider vinegar.
If you want to go the extra mile – cut chips (fries) then pat dry. Put them in bowl or colander and shake with a clove of mashed garlic. Then fry.

Actually as a Belgian we mostly go towards what we call a "frituur" to eat our fries. Every year the local newspaper announced the best "frituur" of the year. It's not only about the fries but also about the snacks that are offered over there
