Here we feature Chef Carlos Gaytan who was the invited chef on April 13 – 16, 2023

“Born in Huitzuco, Guerrero, Mexico, Chef Carlos Gaytán is known for his full spectrum of flavors. Perfecting heirloom recipes at his two restaurants in the heart of Chicago’s River North neighborhood, the weekend of culinary exploration briought together Gaytán’s passion for French technique and Mexican heritage to Los Cabos. Between April 13-26th, guests of Waldorf Astoria Los Cabos Pedregal enjoyed an exclusive opportunity to experience his signature culinary style in paradise. From bright ceviche preparations and the delicate flavors of shrimp to the richness of chicken tinga and house-made tortillas with aromatic spices.”

LED BY THE SECOND MEXICAN CHEF TO OBTAIN A MICHELIN STAR IN FRANCE, THIS ELEVATED WEEKEND INVITES ATTENDEES TO TAKE A JOURNEY OF FLAVOR.

With his first restaurant in Paris, Enrique stands out among other culinary stars for his brilliant approach to weaving Mexican flavors with Parisian tastes. The perfect addition to our ‘Festival of Flavors’, his flavorful technique highlights the history and diversity of Mexican gastronomy. Utilizing cooking as a way to express, have fun, and give pleasure to others, Enrique’s cuisine is lively and colorful—perfectly blending French and Mexican dishes.
