Roquefort-sur-Soulzon geology creates a series of cracks and faults below the surface which are ideal ripening conditions for the production of Roquefort cheese. Ewe’s milk is made into the famous blue vein cheese for which the area is well known. Roquefort produces 70% of the world supply of the cheese.
