When you Grill chicken it’s all in the timing, and the texture, and color there’s a lot more than grilling your chicken texture color, tastes, and having a understanding and love to do the job right.
He used the same knife to cut raw and cooked chicken in front of the customers. Cross contamination give people tasty chicken with a side of salmonella
Phenomenal skill in the preparation but the hygeine here is off the scale bad. However it is true that well kept and stored meat is generally safe (low levels of bacteria are allowed to develop) it is still way out of western standards. What is worth remembering though is Japanese chefs are well versed and trained in serving raw proteins safely (sushi anyone). The meticulousness needed for that I would beleive would find its way throughout the kitchen. In the UK chicken is now practically free from salmonella and safe to eat raw, but even still if we prepared food in the same manner the restaurant would be shut down by EHO. Different cultures, different attitudes. I beleive there is less food poisoning in Japan than in UK so…..
This video is a sure way to make u stop eating Chinese food 🤢… It's definitely the cross contamination and touchin the food with bare hands for me… 🤔 This is also my first time seeing food that looked undercooked 😳 and burned at the same time 😳🤦🏽♀️… I'm so disappointed it's a 👎🏽👎🏽 for this video!!
Like others I'm curious about food safety here. Even if we assume all chickens in Japan are safe to eat raw (which is not necessarily the case), let's compare that to beef in the west. In a lot of western countries it's common to eat raw or undercooked beef, but you'd still NEVER see a chef transfer a cooked steak back to a cutting board used for raw beef.
The chef and staff here are obviously skilled and conscientious, so it's clearly a choice (and not ignorance or negligence) that they are disregarding cross-contamination procedures. I wonder how Japanese food safety regulations view this?
I would not eat ANY of this!! He's put cooked meat on the raw chopping board – and let's not forget the cloth being put on the board, too! He's also touching raw then cooked then back to raw again – and just wiping your fingers on a damp cloth will NOT kill any salmonella bugs that are in the meat. And never mind the fact that the thigh was not cooked long enough and the meat was barely cooked by the bone. Boned meat always takes a lot longer to cook. Sorry – just GROSS!!

dirty rag
The cross contamination is too much for me
10/10 Butchery skills but 0/10 for health and hygiene.

It's different chef. What happen to the original old man chef?
What breed of chicken is this? It looks like the meat is quite firm.

I wondered the exact same thing. He went from handling raw chicken to plating cooked chicken without even wiping his hands. 😮

Its a wonder they dont eat it alive also. Disgusting
