This next food is something I’ve never seen before this is well can you take a guess welcome to Chopstick travel I’m Luke Martin and today I’m in the capital city of Vietnam Hanoi located in the north of the country Hanoi is an extremely popular tourist destination that is known for its incredibly

Delicious street food so today we are going to be taking you along for 24 hours of eating here in Hanoi City but we’re going to be skipping the usual street food suspects we’re not going to be having any F no bcha we’re going to be going for some of the real local

Stuff and we’re going to show you some stuff that hopefully you’ve never seen before it’s going to be a great episode so make sure you stay tuned Until the End let’s go eat some Vietnamese Food For our first stop today in Hanoi we are trying out sweet potato Fritter so these women are frying up uh Shredded sweet potato that’s been battered and then it’s topped with a couple shrimp raw shrimp then they deep fry them they’ve got three different pots full of oil

Bubbling hot they actually put the uh Fritter in the oil in the ladle and then kind of wait for it to get crispy enough that they can remove it from the ladle and then move it through through the different fryers until it’s nice and gold and crispy and it just opened up we

Are waiting for seeds completely packed out and they haven’t even served the first customer yet so the spot you know it’s going to be good when it’s like That so I’m here with my local Hanoi friend L today I’m with my friend L he is a local here in Hanoi and uh we’ve got our what do you call this L what is the name Vietnam called b b b so it’s like a sweet potato Fritter with shrimp and

It’s fresh out of the frying we’re sitting at the the bar counter but you can see freshly fried uh fritters and here in Vietnam I’m noticing them that you guys don’t like to take the shell off of the shrimp is it cuz it gives it an extra crunch or no that’s that’s what

Actually I’ve been wondering too cuz I don’t like the shell so you don’t know yeah cuz I myself take the shell off but people don’t take the shell off let’s keep the shell on First and you know the lady just said to somebody here that just shut it shove it in your mouth

Shove it should we try one yeah all right here you grab one okay we got a sauce here too it’s like garlic sauce and uh some some fish sauce yeah all right let’s try it l I’ve got a shrimp you don’t have a shrimp on Yours very tasty mhm and and sauce is very sweet too yeah garlicky sauce it’s more of a like a snack than an actual meal Super Fresh it’s still kind of like creamy uh sweet potato on the inside actually it’s really good it’s like tempura like tempura Vietnamese tempura

And then that crunchy uh crunchy um shrimp shell on there too it does definitely give it a crunch I don’t know I thought you were going to have all the answers but you don’t even know why either maybe maybe it’s for the extra crunch maybe it’s just because they’re

Lazy I’m not sure extra calcium maybe extra vitamins good though it’s definitely a little bit greasy and oily it would go really well with a beer to be honest like wish wish I had a beer nice little snack to start our tour here in Hano that one had the the shrimp head

Get all that juice we’ve got a plate of a bunch of different greens here L’s going to explain to me how to eat it with the greens as you can see the the lady here has been very kind to cut it up for us so you just need to you know take it

With your Chopstick take some lettuce and then take some basil and then dip it in there with your f okay yeah yeah and all right just eat one she’s been kind enough to cut the the lettuce up for us but she didn’t uh take the shs off the

Shrimp all right let’s try it like this is this like all over Vietnam you can find this everywhere this just kind of a specialty here I think it’s a special thing here in Hanoi because there actually like a whole street dedicated to this really yeah I didn’t

Even know we should probably went there actually a really tasty little snack super packed out with locals and it is not easy to film here in Vietnam when you’re like on a tiny little stool in a cramped Little Alley so we’re doing our best Here so we’re at our second spot this is uh shop that’s serving conji she’s just got a big pot of coni and it looks like there’s meat in it too is there meat in it yeah there’s actually pork in there and then this baby ribs ribs and then they they only have

Two different toppings right which is uh which is this is fried bread stick yeah like in Chinese yo bread this is pork floss pork floss yeah I got both you just got the pork sace I just got Pork yeah and what do you mix this around or

Yeah so you just mix this around and as you can see it’s very hot and so it’s very good for like a cold day to like today yeah and then uh when you have a cold or like a flu like I do right now so it’s really good for you okay I don’t

Know if I should be sitting next to you but yeah it is steaming hot perfect for cold weather once again right on the side of the street here in Vietnam let’s try it out I’m not a huge fan of the pork floss but got to try it

Out oh good very good it was very good the pork floss is a little salty and the Yow kind of absorbs it some conji is like you can still see the pieces of rice in it but this one’s like pulverized like it’s really really like goopy gooey it’s been kind of grinded

Down just because they’ve actually Blended all of the r together so they they use like a mixer like a specialized mixer to gr it all up and then to to cook this up so you eat this all all day long like here in Vietnam like this is a

Breakfast lunch and dinner or uh this is a stable where for when you feel cold or like like day yeah for like winter dish winter dish oh yeah yeah it’s it’s really warming and nice so we’ve got some what is this chili this is chili powder chili powder

And then uh this is uh black pepper black pepper okay when you want extra flavors you can just yeah I was just going to say though it’s actually quite flavorful just like as is surprised at actually how much flavor it is cuz usually like Kani such a plain dish but

This is quite quite flavorful right oh I love that with the black pepper actually I love that this bowl of Ki only cost $30,000 which is about like 1 something dollars and look at how much pork meat you get and how much she gave it a ball

Feel of coni this is like wow surprisingly h m the texture of the coni is like really smooth and like rich I like it too you can see that not only am I sitting on a stool but the the table is also a stool Vietnamese Innovation it’s

Finest Hanoi has got to be one of the most chaotic hectic cities anywhere in the world it is just bustling all times of day you love it or you hate it it’s definitely an experience regardless that was some delicious kanji we’re going to go have another iconic dish you must try

Here in Hanoi well it’s not a dish it’s actually a drink it’s the famous Hanoi egg coffee so this is a really cool cafe called loading tea and egg coffee is something you’ve got to try here in Hanoi it’s very very famous especially popular with the Taurus and I can

Confirm it is absolutely delicious here’s the coffee so basically it’s like a whipped egg kind of like custard that is on top of a shot of coffee you can just see that velvety velvety texture you’re supposed to kind of Stir It Up Before You drink it but let me just try

Some of the Egg card on top There yeah oh my God it’s so good it’s more of like a dessert than a coffee it’s so ridiculously creamy velvety silky smooth on the top and let me kind of mix in the coffee there’s also a little bit of cinnamon in there too and sugar of course it’s not super sweet

Though just so beautiful and then once you start to see the coffee sort of mixing in There it’s just a mouthful of that egg it’s so good I really love this every time I come to Vietnam I got to get a couple egg coffees but theoi is like the birth place of the egg coffee so you got to try it when you’re

Visiting oh yeah you can get it hot or cold I got it hot it’s a little chilly here in Hanoi so perfect way to warm up here in Hanoi in the old quter you’ve got a lot of like the French uh Colonial architecture and then you’ve got a lot

Of these cool cafes which are located inside of these old buildings it’s just a really cool vibe to come here and drink the coffee it’s like stepping back in time is that historically accurate it’s a French villain it’s a French villain this place yeah really cool what year what what year who built It so next up we were having something called banon she has two pots of bubbling water that have a little kind of kind of steaming basket on top of it and she lays out a very thin rice batter and it literally only takes about 10 seconds until it’s steamed into sort of

Like a noodle it’s similar to Chiang fun the only difference is that they’re not doing it in a square shape they’re doing it in a circle shape and she’s working super fast making tons of these you get them uh with different fillings you can get pork you can get chicken you can get

Mushrooms all kinds of different fillings and she’s just making the bonu in one after other after another super fast lightning speed bunun this is something you must try here in Hanoi you can have it for breakfast or you going to have it for dinner like we’re having

Tonight so let’s go try it out okay we’ve got our Bon we ordered ours with pork filling so it’s a really thin uh rice kind of noodle it’s not really a noodle but it’s like a rice batter that’s been steamed and it’s toughed with uh is it pork FL pork fried onions

Fried shallots fried shallots fried shallots and then this is e with mushroom oh we got ours with mushrooms too right think this is M pork okay mushrooms and pork so we’ve also got a sauce back here what is that sauce actually is this fish sauce is it fish sauce yeah

Okay I feel like this is a really good breakfast dish yeah you can actually eat a e a such breakfast especially when you’re in a hurry like when when you have to go just schol work and then you need something fast but this could be the one this is Vietnamese fast food

Yeah much better than uh Canadian fast food much healthier the mushrooms in there give it like a you know some protein some sustenance there’s a little bit of pork and I love the fried shallot and the sauce is like fishless but it must have like a little bit of stock or

Something in there I I think there’s like some broth broth yeah I don’t know maybe they put it in some kind of like a pork broth or something pork broth very light yeah no it’s really good it’s actually like super smooth Goes Down Easy so cool to watch How It’s

Made too just laser the batter in maybe just 5 10 seconds it’s done she peels it off fills it full of whatever you order and it’s at your table fast food Vietnam style honestly this is another one of my favorite favorite Vietnamese dishes it’s just like perfect anytime of day it’s

Just got a beautiful texture it is similar to like Hong Kong chich Chong fun but it’s got its own unique Vietnamese flare to it especially dipping in the the fish sauce all those fried shall on top give a nice little crunch too some texture surprise surprise mink found the chilies

Cans they got beer cans they’ve got uh soda cans and yeah you can get pigeon you can get black chicken uh I think I’m going to try the the silky chicken the black chicken I’ve never seen anything quite like this though that’s just so crazy what a unique Innovative way of

Cooking something it’s like taking beer caned chicken to another level the incredible thing to me that is really like astonishing is the fact that they can actually get the entire chicken inside of one of those cans I have no idea how that’s even possible and I’m

Never seen uh chicken cooked in a can like that in Canada we have something called beer caned chicken but we use the beer can on the inside of the chicken and it kind of like beer steams it and it like goes over top of it but this is

Saw that they had this at the menu this is the local version of balut what do you call it in Vietnamese uh we call it CH vlo so it’s a fertilized J EG dock egg like they eat it a lot in the Philippines but I I didn’t know you

Have your blue how is it that feels good really good I don’t know if I believe it you TR no I’ll Pi of this you can see besides the chicken being stuffed in the can the chicken’s also stuffed with these these leaves these herbs more more kind of medicinal

Herbs which give it a lot of flavor there’s not a whole lot of meat on this guy to be totally honest it’s sort of slim pickings but I had to try this out I’ve never seen anything quite like this let’s try let’s try silky chicken drumstick yeah it’s got a bitterness to

It like very very bitter at the ending aftertaste not bad but super unique the flavor is definitely a little strange the only thing I can sort of compare it to would be bakut it’s like a medicinal herb broth yeah it’s Unique what an interesting dish to see

The little chicken feet sticking out of the top of the beer can never seen anything quite like it let’s go get some Dessert so for dessert we have uh some what do you call this here T in Chinese it’s like stuffed Mochi what do you call it like I’m not even going tot to say that but I can see a lot of influence like Chinese influence in the cuisine especially here in Northern Vietnam this

Is something I like to eat in Taiwan but these ones are like oversized huge ones and you said this is filled with green beans uh so actually there’s one that’s with black sesame one with Sesame and then I think there’s and uh two of them

Are with uh green beans I think green be never actually had green bean I’m going try to cut this in half because it’s way too big oh yeah you can see this one’s got the green bean filling and it’s floating in like a ginger broth can smell it another great winter Dish y hot y really hot there some peanuts and sesame flating around in the broth too very very strong Ginger flavor I don’t think I got any of the green bean filling look at you can see the the bean filling in that one this spot’s pretty

Famous just right on the side of the road perfect way to end the day here in Han oh my God so hot though I guess this is typical dish not not only in China and Vietnam but all across Asia really in Thailand too the the thing that’s really unique about these ones is how big they are they’re like oversized mochi balls and I’ve

  4. Congee is my favorite, its my childhood breakfast. But nowadays the congee texture has changed into something that is so easy to eat, even for babies which i don't quite like it. The congee back in the day had rice in it, like some of the rices became dense to the point it forms into small rice balls with a slight smokey flavor of burnt rice to it then eat along with that youtiao and pork floss…Man, it was so yummy.

    As for the shrimp's shell, Vietnamese had a culture of eating everything so, if ingrediants that are edible without causing any harms, most people won't gonna waste it. If it gives more chewing texture and calcium then i see no reason to not eat it. My grandma once told me that eating shrimp's shell is harmful for stomach, but i ate them lot before and nothing happened so i guess its probably just a myth.

  5. They are not being lazy for not taking the shell off the shrimp. I been eating fried sweet potato with shrimp all my life with banh cuon. The shell is left on in the states too. Most Vietnamese like the texture. 😂 Plus the fish sauce/dipping sauce on the table for banh cuon or any Vietnamese dish is the base. You are suppose to add more lime/lemon, sugar, vinegar, minced garlic and chillies to your liking. That is why it’s there. Southern Vietnamese like a sweeter sauce and Northern Vietnamese like it more sour and less sweet. Adding more chillies doesn’t make you progressive, 😅 it’s always been done. It’s just a preference. You wouldn’t give your 5 year old fish sauce with chillies if they can’t handle it. Kids love banh cuon because it’s soft with a mochi texture and easy to eat. Adults will want more flavor and spice. Y’all need Chris Lewis to show you Viet food. He is a cool white dude that has been living in Vietnam for so many years. He speaks the language and understands the food. Shoot even Sonny’s friend Calvin would be better. 😂

  6. Vietnamese make full use of the meat and sees nutritional values in all kinds of meat parts and different vegetables and fruits. They deem she’ll having calcium. Also, Vietnam is really into tree ripened fruits, freshly picked vegetables and fresh meat and seafood. They don’t trust shelled shrimps as they think it’s frozen food so they leave shell on to show they’re fresh/live when first purchased.

I myself started the New Year very sick due to anxiety and stress for an upcoming surgery January 10th, doctors finally found the issue with my stomach and will do their best to surgically fix it.   11. If your local food “expert” doesn’t know why whole shrimp is used then don’t say shit like “maybe it’s because they’re lazy”. You’re fucking lazy to Google and find out. It’s how it’s cooked and served for ages. Many many cultures, esp in Asia, enjoy their fried shrimps whole and shrimp heads are where the most intense flavor is at.

  12. Lam doesn’t know food that well. The fritter is always made with shrimp shell on. I guess you can request shell off. And it is popular in the south as well. We don’t eat it as is, we wrap it in the herbs and lettuce that they give you. Cutting up the greens and dipping is just weird. I never ate that chicken in a beer can before but I bet they gave you a salt and chili mixture, a long with some lime. Good to see you trying something new in Vietnam. I’ll be back there soon but staying down south where I think the food is much better. Mien Tay, Saigon, and Da Nang has the best food.

  14. We have a similar sweet potato fritter with shrimps here in the Phils as well. We call it 'okoy'. And yes, we also eat the shrimp shell. We leave the shell intact for texture, as well as to make sure that the shrimp meat doesnt get overcooked.

  15. The Coke and beer cans are not made to withstand heat – on the contrary, cold.
    When they are heated up like that [time after time] the aluminum and other metals are leached out and boil into the chicken.
