Hard to believe I’ll eat anywhere as good again.

Incredible experience. Every course was exceptional. I’ll be very surprised if it doesn’t get a third star next month.

Recently eaten at L’enclume in UK, Quintonil in Mexico City, Septime in Paris, El Cellar in Girona.. whilst all excellent, Ynyshir was on another level.

  2. Strangely I’m seeing this restaurant more now the health inspection news came out lol. No hate on the reviews by any means.

  3. So I always find myself in two minds on Ynsyhir. To be clear I haven’t gone (well not since it was a very nice country house restaurant with a different chef). And I get that it consistently receives rave notices.

    But is that a Cantonese roast duck? With hoisin sauce? And if so how much better is it than a freshly cooked Cantonese roast duck with burst-mouth-crispy-skin and a fully rendered fat layer I can get in Chinatown? And if it is hoisin sauce (I know he has served that combo before) how much credit should I give for the most unadventurous and cliche flavour combination ever? (IDK maybe the gammon and pineapple combo was having a week off?)

    So I always wonder what I’m paying for. Maybe it’s just the variety of courses? Or the provenance? O, given most of the dishes seen to be fair simple constructions of a small piece of protein and an accompanying sauce, the saucing and the technique really is that good?

    I remain confused!!
