If done with good taste that fits the restaurant look and feel ? why not.
Like a lot of things, if it’s overdone, it can be seen as a gimmick.

This seems like an engagement bait post, which of course I’m falling for but here to say I don’t think there’s much of any polarization. You see them all the time in sushi and kaiseki meals and a lot of western chefs are nerds when it comes to Japanese pottery

The plates needs to match the restaurant concept and the dish. I would not want to be served classic French food in a wabi-sabi plate.

As a potter, I’d like to point out that some of the items shown are not really wabi sabi. Some seem just mass produced stuff made to look imperfect. I’m not a fan of that style of work as it feels forced rather than natural.
Others just look like poorly made work.
But really masterful work that is handmade, feels organic but is also balanced, considered, and skillfully fired is amazing. I don’t encounter it often but I do see it sometimes, especially at smaller, higher end restaurants that have the money to pay for that kind of work and don’t need a lot.
That kind of work can really make the food plated on it shine by providing a lot of additional visual texture, color, variation and a natural feel that complements well plated modern food.

I’m a fan. Where I don’t care for something like handcrafted tile or such for home decor because the “perfectly imperfect” setup makes for a lot more cleaning, the plates are beautiful and they’re interesting.
